Our Cabernet Sauvignon comes from the estate property in Southern Dry Creek Valley. The vines are carefully farmed to provide ample sunlight to the berries. This technique results in fruit forward Cabernet Sauvignon. There are four blocks of Cabernet Sauvignon on the estate property. This wine is a blend of three of the blocks.
Harvest was early in the morning of October 11 and 13, 2017 so the grapes were delivered to the winery while cold. The clusters were 100% destemmed and filled into temperature controlled tanks where they are allowed to soak on their skins for 5 days. The wine was then fermented where it was pumped over two to three times per day and then the new wine was drained and pressed. It was then aged in French oak for over a year. The wine was bottled August 26th, 2019.
The nose for this wine is all peak-of-the season ripe strawberries and plum, with just a hint of vanilla. The flavors are bright and fruit forward reflecting strawberry and ripe plum with just a suggestion of pencil shavings. Soft tannins and balanced acidity contribute to a long lingering, very pleasant, finish.
